Sinaloa Mariscos: Trucks, Towers and Aguachile

5 spots · San Diego, United States

Aguachile is Sinaloa's gift to the world, raw shrimp cured in lime and chile for about as long as it takes to reach the table, and San Diego has more good versions than any city north of Culiacan. Most of them come from trucks and strip-mall counters: a blue truck on Home Avenue, the 2005 original that put mariscos on wheels, a Convoy Street room that slips chile crisp into a Sinaloa menu. Eat the aguachile first and immediately. Everything else can wait.

Aguachile means chili water, and on the coast of Sinaloa it is raw shrimp cured in lime, chiltepin, cucumber and red onion for about as long as it takes to carry it to the table. Arturo's blue truck off the 805 makes the verde version that landed on the list of San Diego's twelve essential dishes, and he works the window himself, steering first-timers toward the right order. Eat the aguachile immediately with tostadas, then a battered fish taco and a gobernador.

Sinaloa does seafood raw and bright; Jalisco does beef low and slow in chiles. Ferchaladas on Imperial Avenue runs both, which is why the counter never stops moving: ceviches each cured and dressed its own way on one side, birria and consome on the other. Ranked the best mariscos in San Diego by The San Diego List, with the ceviche flight as the reason.

Culiacan, Sinaloa's capital, is the city that gave Mexico the gobernador taco: shrimp, cheese and chiles griddled inside a tortilla until it crisps. Mariscos La Capital on National City Boulevard cooks that whole repertoire, from oysters and aguachile to the gobernador, and the house salsas are where the kitchen shows off. Come hungry and order across the menu rather than one plate.

Luis and Angelica Gonzalez opened El Viejon in 2021 on Convoy Street, San Diego's Asian food corridor, which explains the soy and chile crisp that sneak into a menu built on Sinaloa-style aguachiles and seafood towers. Chef Raul Olmos runs the raw bar, and the aguachile here became the one San Diego TikTok could not stop posting. Order the aguachile and a shrimp taco first, then a tower if there are four of you.

Jorge Fuentes opened a mariscos restaurant in Tijuana in 1997, then noticed that every seafood place in San Diego was a sit-down room. In 2005 he and a partner put mariscos on a truck, one of the first in the city devoted entirely to seafood, and the Beyer Boulevard original has made national taco lists ever since. The ahi-chile tostada, aguachile remade with tuna and pineapple, is the signature; the Gaucho taco of smoked tuna and octopus is the sleeper.
