Ugly Delicious season 2, episode 4, built entirely around meat on a spindle and what happens when it crosses a border. Shawarma and mezze at a Lebanese room that has fed Armenian and Arab Los Angeles for decades, a Boyle Heights counter run by brothers who put Lebanese kebab inside a Mexican menu, and a saj griddle in Oakland turning out mana eesh. It is the clearest statement of the show's whole argument: the interesting food is what happens at the seams.
