The team says they tested hundreds of matcha before landing on the ceremonial-grade stuff they now serve smooth and barely sweet, alongside rotating specials like the Banana Pudding Matcha Latte. It runs out of a limewashed, garage-like space on Pine that's become one of Capitol Hill's most-lined-up-for counters.

Le Grey opened in March 2026 with an uncompromising approach to matcha, using premium powder sourced at Tsujiri standards rather than generic powders. The shop occupies a sliver of space in the International District, designed around an open counter where you can watch them prepare each drink. Every drink uses fresh ingredients and real fruit, no powders or flavorings, and you can adjust sweetness to let the tea quality shine through.

Chayan arrived from Vancouver and the UK with a single idea: milk tea should taste like the tea you're actually drinking, not a sweetened drink that happens to contain tea. They brew with whole tea leaves and fresh milk instead of powders, and let you calibrate sweetness to match. The University District location is small and fills up fast when UW is in session, which is a good sign.
