Southern food traveled to Tacoma with the families who came west for shipyard and military work, and this kitchen has cooked it from scratch on Sixth Avenue for forty years without adjusting for anyone. The fried chicken is double-floured, which is where the shatter comes from, and the cornbread dressing is dense enough to end any argument about what else belongs on the table. Catfish, fried green tomatoes and peach cobbler finish a plate that needs no editing.
