KoJa began as a Bay Area food truck built on a single idea: replace the bun with two pucks of garlic fried rice, seared until the outside crisps while the inside stays sticky. Short rib is the version to start with, Korean marinade against Japanese rice, eaten over a tray because it will come apart. Kamikaze fries and mochimisu round out the order.
