Trejo opened this after decades of playing the heavy, and built the menu around a point he makes plainly: obesity hits Latino communities hard, so the food is lighter and cleaner than the genre expects. Plenty of people walk in wondering whether Machete can really run a restaurant and leave with no jokes left to make about vegan tacos.
