Mexico City's café culture exploded in the last decade, propelled partly by the country's emergence as a serious single-origin producer - the highlands of Oaxaca, Chiapas, and Veracruz now supply beans to specialty roasters who once only looked to Ethiopia or Colombia. Constela is one of the Roma's better examples of this shift: thoughtful sourcing, pour-overs prepared with care, and a space that doesn't rush you. The pastry case does its part too.
