Zoë Kanan, a baker's baker who trained under Melissa Weller at Sadelle's, opened Elbow Bread in late October 2024 at the corner of Ludlow and Division - a neighborhood once home to hundreds of thousands of Jewish immigrants. Working with Court Street Grocers founders, she turns out old-school breads and baked goods with a modern twist: bialys with unexpected fillings, challah made from croissant dough, and reimagined classics like sweet potato pretzels that double as Instagram moments. The name itself nods to both the shop's corner location and the literal elbow grease required to hand-work artisanal dough.
