An asadero is a grill house, and in Sonora - Mexico's cattle country - beef over mesquite is less a menu category than a regional identity. David Orozco started Asadero as a stand in Kent in 2014 and now runs the only Mexican steakhouse in Seattle putting USDA Prime, Australian wagyu and A5 Japanese ribeye over the fire, alongside handmade tortillas and salsas ground in a molcajete. Most cuts arrive on a volcanic stone still hot enough to finish the meat at your table.
