Sisig is a Pampanga dish built on thrift, chopped pork crisped on a hot plate and finished with egg and calamansi. Evan Kidera and Gil Payumo put it inside a burrito on a San Francisco food truck in 2010, and the idea proved good enough to become four permanent rooms, this Valencia Street one since 2019. The pork sisig burrito is the original argument; the Shanghai lumpia is the side you will regret skipping.
