Reem's California is an Arab bakery and restaurant at Jack London Square in Oakland, built around a domed saj griddle. Reem Assil bakes mana'eesh to order on it, laying the dough flat on the dome and pulling it off blistered a couple of minutes later. Go at lunch and eat it standing if you have to, because it is best in the first minute off the saj.
