Rum in most American bars is treated as a base for something sweet, which is the problem Caña was built to correct: a deep shelf of agricole, Jamaican pot still and aged Spanish-style bottles, poured neat as readily as they are shaken. It sits off Olympic in downtown Los Angeles with the entrance around the corner on Flower, a cigar patio out back and live music most nights, and it runs a membership scheme largely to stop the room turning into a nightclub. Sit at the bar and let them pour; the staff would rather walk you through an agricole than build you a piña colada.
