Chicken and waffles came west from Harlem supper clubs, where the two dishes met because musicians finished work too late for dinner and too early for breakfast. Roscoe's made it a Los Angeles institution. The deeper cut is Stymie's Choice, fried chicken livers and giblets with eggs, grits and gravy, named for the Little Rascals actor, and it is what people order once they have already done the waffles.
