Gabino's opened on East Palm Canyon as a creperie, and the useful stroke of invention was treating the crepe as a wrapper for American fillings: barbecue chicken, cheesesteak, whatever else fit inside one. It has since grown into three Coachella Valley counters, with sandwiches and wraps sharing the board with the originals. Daytime hours only, so plan the stop around lunch.
