Pho Tau Bay started as a noodle shop in Saigon, and after 1975 the family rebuilt it here, part of a resettlement that made New Orleans one of the great Vietnamese food cities in the South. The broth is the argument: clear, deeply beefy, herbs on the side, and the bun bo Hue comes out properly aggressive with lemongrass and chili. Order the grilled pork summer rolls alongside the bowl, which is the correct move.
