Melrose Market is a row of 1920s auto-row garages on Capitol Hill, converted in 2010, and Rain Shadow has held the butcher counter since the doors opened. The shop buys whole animals from small Pacific Northwest farms, which is why the sausage, the charcuterie and the steaks all come off the same carcass instead of out of a box. Ask for mortadella straight off the counter and eat it standing there, which is about the highest compliment a butcher case can be paid.
