Katherine learned to cook from her mother, sold salsas and tamales at Coachella Valley farmers markets, and turned that into a La Quinta storefront where the masa is still made by hand. The cooking is California-Mexican in the literal sense: seasonal produce, an in-house bakery, chilaquiles, and a green chile Monte Cristo that reads like a dare and lands like a classic. Breakfast runs late, which the desert appreciates.
