Ernest Hansen was a machinist who could not stand watching snoballs made with a hand plane, so in 1939 he built and patented a machine that shaved ice into something closer to snow, and his wife Mary made the syrups to go on it. Three generations later their granddaughter Ashley runs the same machine on Tchoupitoulas, still cooking syrup in small batches, and the James Beard Foundation named the stand an American Classic in 2014. Get condensed milk on top and accept that the line moves slowly in July.
