Michoacán has one of Mexico's most complex regional cuisines - shaped by Purépecha Indigenous traditions that predated Aztec dominance - producing dishes like carnitas, corundas, and sopa tarasca that are now eaten nationwide but taste completely different in their home state. Rincón Tarasco is one of CDMX's better windows into this tradition: a small, no-frills comedor in Escandón that runs a daily menu of Michoacán staples prepared the way they're meant to be, not adapted for a chilango palate.
