The tacón is not a taco - it's a burrito-scaled flour tortilla wrapped around smoked marlin, melted cheese, vegetables, and whatever fire you can handle, then sliced in half so you can actually manage it. The recipe came from Puerto Vallarta 30 years ago and landed in Guadalajara's Ladrón de Guevara neighborhood, where it has been a lunch staple ever since. No frills, no reservations, just a very large and very good thing to eat.
