Majordomo opened in 2018 on a sleepy industrial block near Chinatown, and immediately became one of the most exciting restaurants in the city. David Chang's first West Coast venture takes his Momofuku sensibility - bold umami flavors, large-format sharing dishes, serious hospitality - and runs it through a California lens. The Whole Plate Short Rib is the centerpiece: a theatrical presentation of bone-in beef with accompaniments, pre-order required. Bing flatbreads (the menu's opening act) are excellent as vehicle and in their own right.
