When Roman Grandinetti opened Regina's in 2018, he wanted to share the recipes his mother Regina brought from her Bed-Stuyvesant childhood - meals built around Loni's mozzarella, prosciutto from trusted suppliers, and spreads the family still makes in-house. Every sandwich carries the name of someone real: an uncle, a cousin, sometimes someone no longer here, turned into stirato bread and memory. The supplies come as seriously as the naming does - Sullivan Street bread, Parisi loaves, whatever Regina can pull in from Italy when it matters.
