Jollibee began as a Manila ice cream parlor and became the rare fast food chain that outsells McDonald's in its own country, by cooking to a Filipino palate: sweeter, saltier, stranger. Halo-halo is the proof, a layered cup of shaved ice, beans, jellies, coconut and flan. It makes almost no sense written down and converts people anyway.
