Corn has been Mexico's foundational food for 9,000 years - predating wheat by millennia - and Expendio de Maiz treats it with the reverence that history demands. Every dish draws on a different preparation: tlayudas, memelas, tetelas, tlacoyos - regional forms from across the country, many made from heirloom maize varieties ground in-house. There's no printed menu; the day's masa shapes and salsas depend on what arrived from the fields that week.
