The owners say it started with a burning Christmas tree and a bottle of whiskey, which is a more honest origin story than barbecue usually gets. What came out of it is a Central District smokehouse splitting the difference between Kansas City sweetness and Texas restraint: brisket run long, spare ribs dry-rubbed, burnt ends for as long as they last. The brisket chili Frito pie is the one people describe to friends afterward.
