The argument the original room made was that the next big thing would be a re-evaluation of Mexican flavors and, just as importantly, of how much you should pay for them. Garcia cures his chicharrón, cooks it sous vide for thirty six hours and fries it; the lamb neck goes into a tamal. Downtown closed in 2020 and Garcia reopened in Culver City in late 2025, in the building that used to be A-Frame.
