Chef James Trees, born and raised in Las Vegas, returned from apprenticeships under Eric Ripert, Gordon Ramsay, and others to open this restaurant in 2018, named after his great-aunt Esther, who paid for his culinary education. The kitchen works with West Coast seasonal ingredients in the Italian tradition - housemade sourdough and brass-die pasta, wood-fired in full view, nothing pretentious, everything grounded in technique and restraint.
