Sud 777 is built on the Pedregal - the ancient lava field from the Xitle volcano eruption roughly 1,700 years ago that also gave UNAM its campus and Barragán his design philosophy. Chef Edgar Núñez has spent years developing direct relationships with small Mexican farmers and foragers, and the tasting menu reads like a map of the country's biodiversity: indigenous corn varieties, wild mushrooms from Oaxacan cloud forests, coastal fish from Baja. It regularly appears on Latin America's 50 Best, and the volcanic garden setting earns its own visit.
