Dustin Valette built The Matheson on the Healdsburg plaza and put the cocktail bar on the roof, which in a town of ground-floor tasting rooms is a genuinely different vantage. Small plates come out of a Mugnaini wood-fired oven, and the copper bar and fire pits stay usable most of the year. Walk-ins are welcome, which matters in a town where most dinner tables are spoken for well in advance.
