Pan dulce - the sweet bread that fills every Mexican bakery - is a tradition built on French technique introduced by bakers who arrived with Maximilian's court in the 1860s, then domesticated over generations into uniquely Mexican forms: conchas with their sugar-shell tops, cuernos, polvorones, campechanas. Gala approaches this heritage without irony, producing pan dulce that's technically excellent and actually uses good butter. The concha is the test; order it first.
