Felipe Castaneda came up through Palm Springs kitchens before opening El Mirasol, and he kept the menu on the interior Mexican side: chicharron simmered in salsa until it goes soft, pollo en pipian thickened with pumpkin seed. The shaded patio fills most nights, a long way from the fajita platters the desert usually hands tourists. Margaritas are strong and poured without ceremony.
