Viola & Agnes' sits in an unlikely strip mall in Seabrook, forty minutes from downtown Houston, and absolutely nobody cares because the food is that good. Everything is made from scratch - gumbo with proper dark roux, catfish fried until crackling, chicken and waffles that arrive at the table like a peace offering. It's the kind of place where the wait is part of the story: slow down, accept it, and use the time to decide if you're getting the pretzel with blue crab dip as a starter.
