Delores Flores was half Lebanese and half Mexican and had her grandson making tacos from the age of three, which is why hushwe, the Lebanese browned butter beef, sits on the menu beside carnitas. The shells are fried, stuffed, pinned shut with toothpicks and fried again, a technique that belongs to one family rather than to a region. Walk-ins only on Ballard Avenue, open late enough to catch you on the way home.
