Lorenzo Lorenzo's Paseo was the most argued-about sandwich in Seattle until he closed it in November 2014. Seven months later his sons, Julian and Lucas, opened Un Bien and started making the same Caribbean roast from their father's recipes - braised pork, sweet onions, pickled jalapeño and aioli on a Macrina baguette. The pink-and-teal shack is theirs outright, which is the point: the recipe passed down through the family rather than through the sign over the door.
