Carnitas Colima has occupied its corner of the San Juan de Dios market for 35 years, selling Colima-style slow-cooked pork rendered in its own fat until it's simultaneously crispy and tender. The tradition of carnitas de Colima - fattier and more fragrant with orange and lard than Jalisco's version - isn't easy to find in Guadalajara, which makes this stall the right reason to venture into the market's deeper passages.
