PLONK is part of a small but serious wave of natural wine bars that have opened in CDMX's inner colonias over the past five years - driven partly by Mexican winemakers in Baja California who've been producing skin-contact and low-intervention bottles since the early 2010s. The list leans on Baja and Mexican producers alongside European naturals, and the kitchen runs a simple menu designed to support the wine rather than compete with it. The name is British slang for cheap table wine, which is either ironic or aspirational.
