Guadalajara's Americana neighborhood runs thick with taquerías, but La Flor de Sahuayo's trompo has outlasted fashion cycles and food trends alike. Named for the Michoacán town that supplied the original recipe, the al pastor here is charred at the edges and threaded through with achiote and citrus. The pink horchata - blended with guava and tamarind - has developed its own cult following among the regulars who know to ask for it.
