Paulie James grew up in Flushing eating Italian deli heroes and bodega chopped cheese, and when he opened this shop with Jon Buscemi in 2017 he set out to make those New York sandwiches properly in Los Angeles. The 3rd Street outpost stacks thin-sliced cold cuts, crisp chicken cutlets and house dressing onto sturdy rolls built to travel.
