Tri-tip is a Central California invention, cut from the bottom sirloin and cooked fast over red oak in the Santa Maria style, and Kern County treats it as a birthright. Jeff Salters, known to everyone as Salty, opened in 2010 and built the place around that fire, adding brisket and chili beans without letting them take over. The tri-tip is what to judge it on.
