Chuy and Marcela Gaytan opened this El Cajon Boulevard shop in 2017 with a family rule: nothing goes out that they would not serve at home. What made it famous is the Chuy burrito, carne asada wrapped around a whole chile relleno, and the salsa bar that regulars work through like a tasting flight. Word travelled fast in 2019 and the line out front has never really got short again.
