Lorenzo Lorenzo's Paseo was the most argued-about sandwich in Seattle until he closed it in November 2014. Seven months later his sons, Julian and Lucas, opened Un Bien and started making the same Caribbean roast from their father's recipes - braised pork, sweet onions, pickled jalapeño and aioli on a Macrina baguette. The pink-and-teal shack is theirs outright, which is the point: the recipe passed down through the family rather than through the sign over the door.

Armandino Batali spent a full career as an engineer at Boeing before opening a salumeria in Pioneer Square in 1999 and teaching himself to cure the coppa and salami his family had made in Italy. The shop moved a few blocks to Occidental Avenue in 2018 and changed hands, but the recipes and the lunchtime line came with it. Regulars have treated the counter as a temple to cured meat for a quarter century, and nobody standing in that line has ever needed convincing.

Phinney Ridge, Seattle · $$ · 6 pts
Bongos sits in Green Lake with a sandy outdoor patio that feels like a tropical detour from the Seattle drizzle. The menu centers on Cuban and Caribbean basics: jerk chicken, braised pork, grilled shrimp, each spiced with confidence. Counter-order, grab a buzzer, and eat food that's built on technique and flavor rather than pretense. The portions are generous enough to share and still take home, the prices honest, the crowd genuinely happy.

Focaccia appears everywhere in Seattle, but Hushy's treats it like an argument waiting to be made: the bread arrives soft-crumbed and salt-brined, a platform for house-roasted meats and pickled elements that pile on with real intention. This family-owned counter-service spot opened in 2024 and landed on Seattle's best new restaurants list almost immediately, built on the philosophy that a sandwich should taste like it was made for a reason.

SoDo, Seattle · $$ · 4 pts
Paseo's Caribbean sandwiches became so famous when the original Fremont location opened in 1992 that the lines wrapped the block and the restaurant became shorthand for Seattle food identity. It closed briefly in 2014, was acquired and reopened, and now operates from SoDo - a different building but the same formula: slow-roasted meats, caramelized onions, aioli on a French roll. The Caribbean sandwich tradition Paseo draws from is Cuban and Puerto Rican in origin, adapted over decades into something entirely its own. Seattle food writers still argue about whether it's as good as the original. The line outside doesn't care.

Michou Deli spent 25 years as Pike Place's no-fuss lunch counter. Then in April, it became Friends of Carmela, an East Coast-inspired deli helmed by Chef Nate Simmons and co-owner Kika Westof, who also runs Lavish Roots Catering. The rebranding pivoted the menu toward house-made Italian-American sandwiches, breakfast plates, and desserts, with fresh ingredients sourced from the Market's own vendors. Everything gets prepared on-site; the soup station that anchored Michou's is now a coffee bar.

Born from a Seattle food truck, Valhalla moved into Greenwood with the same DNA: straightforward counter service and creative flavor combinations that actually work. The telera rolls hold firm, the meats come generous, and the aioli and slaw do their job without overshadowing the foundation. This is casual food made with a real hand.
